Fruit Compote

6 cooking apples, peeled & chopped
1/2 cup golden raisins
3 tbsp sugar
1/2 tsp cinnamon
1/4 cup water
1 tbsp chopped walnuts
Place all of the ingredients in a saucepan and cook over medium heat about 20 min., or until apples are tender.
Let cool.
Top with chopped walnuts before serving.
6 servings.

Sunshine Snack Bars

2 cups shredded carrot
1/4 cup dried chopped apricots
1/2 cup golden raisins
2 cups quick cooking oats
1/2 cup chopped walnuts
1/2 tsp. cinnamon
12 oz apple juice concentrate (thawed)
Preheat oven to 350 degrees.
Combine first 6 ingredients in bowl.
Add apple juice concentrate and stir well.
Press ingredients into a greased 9×11 glass baking dish.

Celery Dip

8 oz package light cream cheese, softened
2 tbs light sour cream
1/4 cup chopped walnuts
20 green olives with pimento, chopped
Serve with: cut up celery or other veggies
Stir together the cream cheese and sour cream.
Mix in the walnuts and olives.

Frosty Fruit Cups

16 oz crushed pineapple, undrained
3 firm bananas, peeled & sliced
16 oz frozen sweetened strawberries
¼ cup chopped walnuts
Thaw strawberries; do not drain.
Put pineapple in blender, puree.
Add bananas and strawberries to blender, process until smooth.
Pour 1/3 cup of mixture into lined muffin cups; sprinkle with walnuts.
Freeze for at least 2 hours before serving.
