Pumpkin Smoothie
1/2 cup canned pumpkin
3/4 cup milk or vanilla yogurt
2 tsp brown sugar
1/4 tsp cinnamon
1/8 tsp nutmeg
4 ice cubes
Place all ingredients in blender container.
Blend until smooth.

1 15-ounce can of pumpkin
1 8-ounce package of cream cheese (we used lowfat)
2 cups of powdered sugar
3 teaspoons of pumpkin pie spice
Ginger snaps and apple slices for dipping
Add all ingredients to blender container.
Blend until smooth.
Several Servings.
1 box spice cake mix
1 15oz can of pureed pumpkin
2 egg whites
Use mixer to combine ingredients.
Place cupcake liners in muffin tin.
Pour batter into liners.
Bake at 350 degrees for about 40 minutes.
24 Servings.
TIP: No frosting necessary, these are moist and yummy. Healthier alternatives to frosting: light whipped cream, drizzle of chocolate or caramel syrup, peanut butter.
1 box devils food cake mix
14 oz. can pureed pumpkin
1 egg white
Combine ingredients, mix very well.
Place cupcake liners into muffin tin.
Pour into cupcake liners (Batter will be very thick!)
Bake according to box directions.
24 Servings.
