Kitchen Sink Snack Mix

It’s easy for kids to throw together a quick trail mix with whatever you have on hand. Keep a batch in a big airtight container for impromptu snacking fun! Some tried-and-true options include:
Cereal
Popcorn
Peanuts, pecans, walnuts, almonds, soynuts
Raisins, shredded coconut, other dried fruit
Sunflower seeds, pumpkin seeds
Animal crackers, teddy bear crackers, goldfish crackers

Granola

1 cups whole wheat flour
3 cups rolled oats
½ cup coconut
½ cup wheat germ
¼ cup water
½ cup oil
½ cup honey
1 tsp vanilla extract
1 tsp salt
Optional: 1 tbs Sesame seeds, ¼ cup nuts, and/or ½ cup dried fruit.
Preheat oven to 250 degrees.

Fruity Snack Mix

4 cups crispy corn cereal squares
1 cup dried mixed fruit, chopped
¼ cup yogurt covered raisins
½ cup chopped mixed nuts
1 cup banana chips
Mix; store in airtight container.
12 servings.

Raisin-Nutty Sandwiches

3/4 cup light cream cheese
¼ cup raisins
¼ cup chopped nuts
1/8 tsp cinnamon
2 tbs maple syrup
6 slices raisin bread
Combine first 5 ingredients; stir well.
Spread 3 slices of bread with mixture; top with other 3 slices of bread.
Cut into quarters.

Celery Dip

8 oz package light cream cheese, softened
2 tbs light sour cream
1/4 cup chopped walnuts
20 green olives with pimento, chopped
Serve with: cut up celery or other veggies
Stir together the cream cheese and sour cream.
Mix in the walnuts and olives.

Frosty Fruit Cups

16 oz crushed pineapple, undrained
3 firm bananas, peeled & sliced
16 oz frozen sweetened strawberries
¼ cup chopped walnuts
Thaw strawberries; do not drain.
Put pineapple in blender, puree.
Add bananas and strawberries to blender, process until smooth.
Pour 1/3 cup of mixture into lined muffin cups; sprinkle with walnuts.
Freeze for at least 2 hours before serving.
