Peppermint Hot Chocolate

1/3 cup chocolate chips
4 cups milk
1/4 cup cocoa powder
1/4 cup sugar
1/8 tsp peppermint extract
Combine ingredients in a saucepan.
Heat over medium-high heat, whisking constantly until it boils.
Pour into mugs.
4 servings.

Banana Hot Chocolate

2 cups milk
2/3 cup dark chocolate chips
¼ tsp cinnamon
1/4 cup sugar
1 banana, mashed
Heat milk in saucepan over medium heat.
Just before the milk boils, whisk in the chocolate.
Remove from the heat and add the cinnamon and sugar.
Add mashed banana, whisk well.
Pour into mugs.
2-4 servings.

Fruit Juice Popsicles

These are great on hot days, and other days too!! Simply freeze 100% fruit juice into popsicle molds for a healthy, kid-approved snack!
TIP: If you don’t have popsicle molds, try using 3-oz-size paper cups and craft sticks.

Fruit Cream Popsicles

1 banana
10 oz. package frozen sliced strawberries and juice, thawed
8 oz. can pineapple and syrup
1/4 c. milk
Popsicle molds
OR
3 ounce cups and craft sticks
Mash up banana and strawberries with a fork.
Add pineapple, syrup and milk; mix thoroughly.
Pour into popsicle molds or paper cups.
Insert sticks and freeze.
6-8 Servings

Cottage Cheese Dip

1 cup low-fat cottage cheese
2 tbs peanut butter
1/4 tsp ground cinnamon or apple pie spice
1 to 2 tsp skim milk
Place all ingredients in blender container.
Blend until smooth.
