Ricotta Fruit Dip

2/3 cup ricotta cheese
2 tbsp sugar
2 tbsp orange juice
1 cup vanilla yogurt
assorted cut-up fresh fruit
Place all ingredients in blender or food processor container.
Blend until smooth.

Cheesy Pineapple Toast

2 slices of bread
butter or margarine
2 slices of your favorite cheese
2 pineapple rings
Preheat oven to 350 degrees.
Spread butter on bread.
Layer cheese and pineapple ring on top.
Bake until cheese melts.

Italian Popcorn

6 cups popped popcorn
Nonstick cooking spray
2 tbsp grated parmesan cheese
1/2 tsp italian seasoning
Put popcorn in large bowl.
Spray lightly with cooking spray.
Toss popcorn, spray again.
Toss with parm and seasoning.
6 servings.

Baked Cheese Sticks

2 mozzarella sticks, cut in half
1/4 cup bran cereal crumbs
1 egg white
salt & pepper to taste
serve with: marinara sauce
Preheat oven to 375 degrees.
In a shallow bowl, season cereal crumbs with salt & pepper.
Dip cheese sticks into egg white, then dredge with crumbs.
Repeat dipping into egg white; roll in crumbs to coat.

Squashy Spaghetti

1 spaghetti squash
shredded parmesan cheese, to taste
butter or margarine, to taste
Pierce skin of squash and microwave 6 minutes for every pound of squash.
Cut squash in half lengthwise, and scoop out seeds.
Use fork to scrape out strands (Kids love this part, it’s like twirling your fork in pasta!)
Toss squash with margarine and top with parm.

Cheddar Cheese Crispy Snacks

chedder cheese flavored mini-ricecakes
OR
firm crackers
drained salsa
shredded cheddar cheese
Arrange rice cakes or crackers on a baking sheet.
Layer drained salsa and cheese on top.
Place in oven at 350 just until cheese is melted.
