What about “Peanut butter and mayonnaise sandwiches”? Now, you may think I’m making this up, but peanut butter and mayonnaise go together like onions and peaches! They were made for each other, you could say. And if you ever find yourself short of jelly, marshmallow creme, or honey, you may decide to make a pb & M for yourself.

We used to put cucumber slices with the peanut butter – it makes a cool, crunchy sandwich and also keeps the peanut butter from sticking to the roof of your mouth.

There’s another variation of this sandwich that uses almond butter and agave nectar. If you make it with high fiber bread, the sandwich can yield up to 18 grams of fiber!
