Busy Evenings, Quick Dinners

Some days it feels like all I do is think about food. More specifically, what to feed my kids. Breakfast, snack, lunch, snack, dinner… You know what I’m talking about, right?


Days when we’re hanging out at home, coming up with dinner ideas isn’t too terribly hard. Chaotic evenings when we are, literally, eating dinner on a ball field… those are different. Many times, those end up being Peanut Butter & Jelly sandwich nights, simply due to lack of time and inspiration.

Slightly easier are the nights when we have an hour to make and eat dinner before heading off to a game. I’ve been on the lookout for quick, easy recipes that are kid-friendly and reasonably healthy. I found a few in this article, and plan to keep looking…

Peanut Butter Veggie Dip

1/4 cup peanut butter
1/4 cup hot water
2 tablespoons soy sauce
1/4 teaspoon dried ginger

Whisk ingredients together until well blended.
Several servings.
