Peanut Butter-Banana Freezer Grahams

1 cup ripe mashed bananas
1 cup peanut butter
26 graham crackers

Combine bananas and peanut butter.
Spread 2 tbs onto each of 13 graham cracker squares; cover with second graham cracker.
Wrap with plastic wrap and freeze.
13 servings.

New Recipes: September

Here are a few recipes I just added to the site. All three were tested by my kids. I must say I was shocked to see them eat the olives in the Kid Kabobs… I guess it’s another example of how letting kids play with food gets them to try new things!

Cheese cubes, Celery, Pickle & Olives… oh my!

Fruit Burritos Recipe
These are perfect for after school or a light meal.

Kid Kabobs

12 cheese cubes (we like mild cheddar and mozzarella, but any kind will work)
1 dill pickle, cut into cubes
6 olives
1/2 stalk celery, cut into cubes
6 toothpicks*

(*toothpicks not recommended for younger children)
Let kids alternate the cheese, pickle, and celery cubes with the olives.
2-3 Servings.

After School Snacks

Well, it’s official… school has started and is in full swing here. My daughter, a first-grader, went back on August 24th. My four-year-old son started preschool last week. (Don’t they grow so FAST?!)

My daughter is in school all day this year, she eats lunch at 11:00 at comes home at 3:00- super hungry! We’ve been trying some of the snacks from Dawn Goldberg’s After School Snacks e-cookbook. Check it out, it’s filled with some terrific snack ideas and nutritional information AND it’s on sale until the end of October :)

Fruit Burritos

4 6-inch tortillas
4 tbs peanut butter
1 banana, sliced
4 strawberries, sliced
1 peach, peeled & sliced (remove pit)
1/4 cup blueberries
4 tbs vanilla yogurt

Spread about 1 tbs peanut butter over each tortilla.
Place fruit slices down center of each burrito.
Drizzle 1 tbs vanilla yogurt over fruit.
Roll up tortilla, burrito-style (fold up one side, tuck under fruit, fold up bottom, then roll other side over).
4 servings.
