Bananas with Oats

1/2 cup rolled oats
1 banana
dash cinnamon
dash sugar (or honey)
Directions:
Peel the banana and cut up into pieces.
Add oats and mix well.
Sprinkle to taste with cinnamon and sugar or honey.

1 banana
16 animal crackers
Slice banana into 8 slices.
Put each slice between 2 animal crackers.

1 graham cracker
1 tbsp whipped cream cheese
1 tsp strawberry jam
Top cracker with cream cheese and jam.

Cracker Jax Munchies

2 qts popped popcorn
1 ½ cups peanuts
¾ cup honey
Mix popcorn & peanuts in large mixing bowl; set aside.
Heat honey to a boil in small saucepan; let simmer on low 10 minutes.
Pour over popcorn, stirring gently with greased spoon to coat.

apples, cored and sliced into rings
peanut butter
granola
Spread peanut butter on top of each apple ring.
Press granola on top of peanut butter.

Flakey Peanut Squares

**This recipe is rather sugary. It might work well as an occasional sweet treat.
1 cup corn syrup
1 cup sugar
1 cup peanut butter
1 ¼ cup dry roasted peanuts
5 cups corn flakes
Combine corn syrup and sugar in 3-quart heavy saucepan.
Bring to a full boil, stirring constantly.

Fruit Sushi

1 slice bread
2 tbsp creamy peanut butter
banana slices
strawberry slices
Trim crust from bread; spread peanut butter on bread.
Place banana slices in a row on edge of bread, then a row of strawberries.
Starting with fruit edge, roll bread into a tube.
Slice into four “sushi” pieces.

Honey Nut Popcorn

7 cups popcorn, salted
½ cup peanuts
2 tbs honey
3 tbs light margarine
½ tsp cinnamon
Preheat oven to 350 degrees.
Spray large baking pan with nonstick cooking spray.
Put popcorn int large bowl, mix in peanuts.
Microwave honey, margarine, and cinnamon for 30 seconds; stir.
Pour over popcorn, stirring gently with greased spoon to coat.
Spread popcorn evenly in pan.

Jello Banana Split

1 banana
1 cup cherry flavor gelatin (prepared)
2 tbsp whipped cream
Split banana lengthwise, place in serving dish.
Spoon gelain over banana.
Top with whipped cream.

Lemon Ice

1 3-oz package lemon flavor gelatin
1 cup water
1 cup cold seltzer
1 tbsp lemon zest
2 tbsp lemon juice
Boil water.
Put gelatin mix in bowl, add boiling water and stir until dissolved.
Stir in seltzer, zest and juice.
Cover bowl, put in freezer until firm.
To serve, thaw slightly then use spoon to scrape off small pieces into serving dishes.
6 servings.

Peanut Butter Balls

1 cup peanut butter
1 cup dry milk powder
½ cup honey
Mix all ingredients together well.
Shape mixture into small balls with clean hands.
4 Servings.
TIP: Try letting kids roll these in crushed corn flakes, crushed graham crackers or coconut flakes!

Peanut Butter Crispy Squares

Honey
1 flour tortilla

Spread peanut butter and honey on tortilla.
Sprinkle with granola.
Roll up the tortilla, then slice it into bite-size pinwheels.

Spread peanut butter on cracker(s).
Top with a thick slice of banana.
*These are called Updsidedown Snacks because you can turn them upside down and they stay together! (Try it!)

Waldorf Pitas

1/2 cup vanilla yogurt
1/2 green apple, cored & diced
1/2 red apple, cored & diced
1/2 tbsp lemon juice
1/2 rib celery, sliced
1/4 cup seedless red grapes, chopped
3 tbsp dried cranberries
3 pitas
Combine fruit in small bowl.
Pour lemon juice over fruit, toss.
Pour yogurt over fruit, stir to combine.
Divide fruit mixture among pitas.
