Cinnamon Apple Bran Mini Muffins

1 1/4 cups bran
1 cup flour
1/2 cup brown sugar
2 1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 cup milk
1/3 cup vegetable oil
2 eggs
1 apple, peeled and chopped
Preheat oven to 350, grease two mini muffin pans.

Mexi Popcorn

8 cups plain popped popcorn
1/4 cup grated parmesan cheese
1 tbsp. chili powder
1 tsp. salt
1/2 tsp. garlic powder
In a small bowl, stir together cheese and seasonings.
Pour over just-popped (warm) popcorn, toss to coat.

Apple Cider

2 quarts apple juice
1 tsp cloves
2 cinnamon sticks
¼ cup brown sugar
Combine ingredients in crock pot.
Cook on low for 1-2 hours.

Fruit Compote

6 cooking apples, peeled & chopped
1/2 cup golden raisins
3 tbsp sugar
1/2 tsp cinnamon
1/4 cup water
1 tbsp chopped walnuts
Place all of the ingredients in a saucepan and cook over medium heat about 20 min., or until apples are tender.
Let cool.
Top with chopped walnuts before serving.

3/4 cup pineapple juice
1/4 cup coconut cream
1 cup crushed ice
